Baked Kelewele (Spiced Plantain)

Baked plantain 

Plantain is honestly one of my favorite snacks and flavoring it just makes it even more delicious. I like to bake my plantain instead of frying it to reduce the amount of oil that I am using.

Ingredients

  • 2 ripe plantain

  • 1 lemon

  • 1/2 tsp paprika

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • 1 tbsp avocado oil

  • 1/3 cup cashews (You can use any nut)

  • 2 tbsp minced onion

  • 2 garlic cloves

Directions

  1. Preheat oven to 350 degrees Farhenheit

  2. Remove the skin from the plantains and chop it into your desired shape and place them into a bowl.

  3. Add lemon juice, paprika, salt, black pepper, minced garlic and onions, and avocado oil to the plantains and gently massage the seasonings in. Allow the mixture to marinate for at least 15 minutes.

  4. Transfer the seasoned plantains to a baking pan lined with parchment paper.

  5. Allow it to cook for 40 minutes and turn the plantains often to make sure that they don’t burn.

  6. Add the cashews the remnants of the seasoning mix that you used to marinate the plantains and gently massage the seasonings in.

  7. Add the cashews to the oven during the last 10 minutes of cooking the plantains to lightly roast the nuts.
