Fonio African Breakfast Porridge

I recently came across fonio and have been really enamored by how easy it is prepare. When I went to Whole Foods, I met an African woman who was also about to buy fonio. I asked how her she likes to prepare it and she said that she makes it the way she would prepare oatmeal for breakfast. That inspired me to create a breakfast bowl using fonio. This is a great African plant-based breakfast to enjoy in the morning.

Ingredients

  • 1/4 cup of fonio

  • 1/2 cup of plant-based milk of your choice (I used soy milk)

  • 1 tablespoon of flax seed and chia seed blend

  • 1 tablespoon of almond butter

  • 1/2 teaspoon of cinnamon

  • Honey to taste

  • Fresh berries for topping

Directions

  1. Mix the fonio, flax seed, chia seeds, and cinnamon together. Add the milk and allow the mixture to sit at room temperature for 30 minutes. This will allow the fonio and chia seeds to swell up a bit.

  2. Heat the mixture in the microwave for 2 minutes.

  3. Add the almond butter and honey and stir the fonio mixture.

  4. Add the fresh berries as a topping
